The island wakes east. Levante is named for the wind that carries the morning.
On Menorca's south coast, a single shelf of marès limestone holds twelve tables above the water. The fire is lit at noon. Lunch begins at half past one and follows the light until it leaves — five hours, five acts, nothing hurried. Nothing on the table has travelled further than the island's shore.

The kitchen cooks with the light. Raw and cold while the sun is high; fire as the shadows grow long; sweetness at golden hour. The menu changes with the boats and the garden — the shape of the afternoon does not.

A quarry, reopened.
For five centuries Menorca built itself from marès — the pale stone cut from its own ground. Levante returns to a disused quarry face above the water: one room, one long shelf of stone, finished in island oak, raw linen and cast bronze. The sun does the decorating.

We don't cook against the clock. We cook with the light.
Marta cooked over Basque fires for a decade before the island called her home. At Levante she keeps a short menu and a long fire, and lets the day decide the rest.
